The point of this blog is simply because I am cheap and lazy. Well, and because my husband has a gluten intolerance. In 2009 he technically tested negative for Celiac disease, but once we ruled out many other illnesses and went on a gluten free diet, he has been symptom-free (except for 2 minor incidents in which we know he ingested gluten). Since then, we've adopted a whole new lifestyle.
It's hard being a spouse who isn't affected by gluten, giving up all those YUMMY pastas, breads, casseroles, etc. I've been experimenting with GF food for a little over a year, and I've found that it's quite expensive and time consuming. I often seek out blogs & websites that discuss gluten free living, but I hate the constant need to replace baked goods and "normal" food (i.e. let's make tiramisu out of 26 ingredients, resulting in disgusting hard-as-a-rock ladyfingers with cream on top!). It seems like you have to spend hours in the kitchen, mixing flours/gums & weird expensive stuff that can only be found in health food stores. And let's be honest, it NEVER tastes like the real thing. I work full time and have neither the time nor the energy nor the funds to devote to these recipes.
That said, my hope is to use this blog to share ideas, recipes/ingredients, joys & woes, etc. I will probably reference adapted recipes & will try to not infringe copyrights by giving credit where it's due. This will not be perfect. I don't think my husband is majorly affected by cross-contamination so I can't claim that anything I post is 100% safe if you are ultra-sensitive. I can't claim to be a master chef, but I love food... and even more, I love cheap and easy gluten free food. If you share this affection, then follow along & chime in.
